"Takasago" is a kaiseki meal prepared by the head chef using carefully selected ingredients, making the most of their natural flavors.

Rare "Noto Beef" will be served as steak. Oshima We will also prepare our signature Jibuwan.

Appetizer: Gorojima sweet potato and kuruma prawn with sesame dressing (Hyakumangoku shiitake mushroom, bracken fern, broad beans)

Appetizers: Marinated young sweetfish / Steamed Noto pork with salt / Firefly squid with salt koji dressing / Sardines (caught at Kanazawa Port) and butterbur simmered in plum sauce / Clams (caught at Kanazawa Port) and Okinawa spinach in broth

• Soup: White rockfish [caught at Kanazawa Port] and clams in a clear broth (Kanazawa bamboo shoots, Kaga namafu, udo, kogomi)

・Assorted sashimi

・ Jibuwan

Grilled dish: Grilled blackthroat seaperch with yuzu sauce

・Dish: Grilled Wagyu beef (with colorful vegetables)

・Vinegared dish: Okina-maki (Kaga thick cucumber) with natural sea bream [caught at Kanazawa Port] and sweet shrimp [caught at Kanazawa Port]

・Meal: Sushi roll / Miso soup

• After the meal: Kaga lotus root kudzu mochi (with strawberry and strawberry ice cream)
