Support project using ingredients from Ishikawa Prefecture

Oshima, a Japanese cuisine formerly a traditional inn in Yamanaka Onsen, Ishikawa Prefecture, has organized this fair to support producers affected by the 2024 Noto Peninsula earthquake and other people who have helped us in various ways. The restaurant will offer seasonal menus. Why not support the local community while enjoying dishes made with Kaga vegetables and seafood from the Sea of Japan?

・Appetizer: Sakuraka tofu (clams, horenso grass) / Tiger prawns and uruy dressed with udon blossoms (Hyakumangoku shiitake mushrooms, bamboo snapper)

Clean soup: Red snapper [landed at Kanazawa Port] and steamed bracken (lily petal root, yuzu)

・Grilled Yanagihachime (caught at Kanazawa Port) and grilled bamboo shoots (Gorojima Kintoki, Kogoumi, Taranome, Jade peas)

Vinegared squid [landed at Kanazawa Port] and leeks (gibasa [landed at Kanazawa Port], mustard vinegar miso)

・Meal: Rice cooked with plum shellfish (caught at Kanazawa Port) and hijiki seaweed / Miso soup / Pickles

・After-meal Dekopon jelly (strawberry, kiwi, cherry blossom ice cream)

・Clean soup: Steamed wild red sea bream (landed at Kanazawa Port) in Domyoji style (with lily petals and yuzu)

・Assorted sashimi

・Grilled dish: Haruyama-yaki green flatfish [landed at Kanazawa Port]​ ​(Kaga lotus root kinpira, Gorojima kintoki sweet potato)

Vinegared alfonsino [landed at Kanazawa Port] and bamboo shoots marinated in kelp (with gibasa [landed at Kanazawa Port] and mountain angelica)
